What is Fermentation

 

Fermentation is a fundamental biological process that occurs when microorganisms, such as yeast or bacteria, act on substances such as sugar, transforming it into other substances.

From the point of view of the microorganisms involved it is a survival strategy while from our point of view it is a very precious phenomenon which, since the dawn of time, has allowed us to obtain particular foods from raw materials.

For example, the alcoholic fermentation that is involved in the production of wine acts on the sugars present in the grapes of the must. Yeasts added to the grape must begin to consume the sugars present in the grapes and this chemical reaction produces ethyl alcohol and carbon dioxide. Alcohol gives wine its characteristic flavor and aroma.

However, fermentation does not take place in a vacuum and actually needs particular environmental parameters to take place and this is where laboratory tools such as the fermentation chamber come into play.

What is the Fermentation Chamber

 

The fermentation chamber is a laboratory instrument composed of a compartment insulated from the outside within which it is possible to alter certain environmental parameters, such as temperature, relative humidity and air circulation.

The fermentation chamber is therefore part of the broader family of climatic chambers, that is, all those laboratory instruments that allow the environmental conditions inside them to be modified and controlled, for the most diverse purposes.

Many of these chambers are used for testing products or materials, others such as growth chambers or the fermentation chamber instead serve to produce certain atmospheric conditions in order to alter the biological processes of the samples placed inside.

What is the Fermentation Chamber For?

 

Let's get to the point: what is a fermentation chamber for?

As we anticipated, fermentation needs very precise temperature and humidity values to take place and not all fermentations are the same.

For example, most wines ferment between 15° and 30°C, while beer has a narrower range, i.e. between 18° and 24°C, while the lactic fermentation of yogurt occurs between 43-46° C.
